- Preheat grill to medium-high heat, approximately 400°F.
- Place Cajun beef sausages on the preheated grill. Cook for 10 to 12 minutes, turning every few minutes to ensure even browning on all sides. The sausages should reach an internal temperature of 160°F. Remove from grill and let rest for 2 minutes before assembling.
- While sausages are cooking, split each baguette in half. Place cut-side down on the grill for 1 to 2 minutes until lightly toasted and crisp.
- In a small mixing bowl, combine mayonnaise, Dijon mustard, Creole mustard, ketchup, parsley, hot sauce, paprika, garlic powder, onion powder, and lemon juice. Whisk thoroughly until completely smooth and well incorporated. Season with salt and black pepper to taste.
- Spread a generous layer of remoulade sauce on both cut sides of each toasted baguette. Layer the bottom half with shredded lettuce, tomato slices, dill pickles, and red onion slices. Place a grilled sausage on top of the vegetables. Close with the top half of the baguette and press gently to compact slightly.
- Serve sandwiches immediately while the sausage is still warm and the bread maintains its texture.
