- Bake vanilla cake according to package instructions or your preferred recipe. Allow cake to cool completely before proceeding with crumble preparation.
- Using an electric mixer, beat softened cream cheese and butter until smooth. Gradually incorporate powdered sugar and vanilla extract, mixing until fluffy and well-combined.
- Crumble cooled cake into fine pieces in a large mixing bowl. Add frosting incrementally, mixing until mixture holds together when pressed but remains pliable enough for shaping.
- Portion mixture into 24 equal pieces. Roll each piece into a ball, then gently flatten one side and shape into a teardrop or wedge form to resemble watermelon slices.
- Melt small portion of green candy melts. Dip tip of each lollipop stick into melted candy and insert approximately halfway into shaped cake pops. Place in freezer for 20 minutes to set.
- Melt pink or red candy melts with small amount of vegetable oil if needed for proper consistency. Dip each chilled cake pop into coating, allowing excess to drip off. Immediately press mini chocolate chips into surface for seed effect before coating sets.
- Melt green candy melts. Dip bottom portion of each coated pop into green coating to create watermelon rind appearance. Insert sticks into cake pop stand or styrofoam block to set completely.
