01 - Preheat oven to 400°F. Line a baking tray with parchment paper.
02 - Pat cod fillets dry using paper towels and arrange them evenly on the prepared tray.
03 - In a small mixing bowl, combine olive oil, zaatar, sea salt, black pepper, lemon zest, lemon juice, and minced garlic.
04 - Evenly brush or spoon the zaatar marinade on the top surface of the cod fillets.
05 - Bake for 12 to 15 minutes, or until the fish appears opaque and flakes readily when tested with a fork.
06 - Transfer cod fillets to serving plates, garnish with chopped parsley, and present with lemon wedges.
