01 - Preheat oven to 400°F. Place garlic cloves on a piece of foil, drizzle with olive oil, wrap tightly, and roast for 20 to 25 minutes until soft and golden.
02 - Place potatoes in a large pot and cover with cold, salted water. Bring to a boil, then reduce heat and simmer for 15 to 20 minutes until fork-tender.
03 - Drain potatoes thoroughly and return to pot. Add roasted garlic, butter, and warm milk or cream heated gently beforehand.
04 - Mash potatoes and garlic together until smooth and creamy or to desired consistency.
05 - Stir in chopped chives, salt, and pepper. Adjust seasoning to taste and serve hot, garnished with extra chives if desired.
